The world of non-alcoholic beverages is blossoming, and we are excited to introduce Norïe to it. Driven by curiosity and innovation, we focused on fermented flowers and botanicals to craft a drinking experience that is sophisticated, creative, and celebratory. Norïe isn’t just an alternative to alcohol—it’s a whole new perspective. 

When we started brainstorming Norïe, we were looking for something that we couldn’t find for ourselves despite so many incredible brands. We wanted a sophisticated and enjoyable drink with depth and complexity, but also with the creative freedom to be something entirely its own.

It took us a lot of research and experimentation to get to what is now one of the core pillars of Norïe: fermented flowers. We start with flowers like milk thistle and chamomile, which are already rich in character, and we let fermentation bring out their most vibrant expressions.

Fermentation holds untapped potential in the non-alc space, and we’re just beginning to explore its full creative possibilities.

 

Why Fermentation is the Next Big Opportunity in Non-Alc

What excites us about non-alc beverages isn’t just the absence of alcohol, but also the absence of limits to create new flavors. As the industry evolves and consumers’ interest in non-alc drinks increases, the possibilities go far beyond zero-proof versions of traditional alcoholic drinks.

In our view, creating an interesting non-alc beverage means working from the ground up: experimenting with different ingredients, adjusting proportions, and striking the perfect balance of sweetness, acidity, and bitterness. But making something truly great— delivering that “wow” factor—takes more than great ingredients. It demands technique and thinking out of the box. Fermentation gives us this edge. While many associate it with funky, salty, or sour notes, its potential goes far beyond those profiles. It builds depth, enhances aroma, and creates a new sensorial experience altogether. 

 

Fermentation: A Little History, A Lot of Flavor

As a former chef with experience in Michelin-starred restaurants, Norïe’s co-founder Carolina has always been fascinated by food science. “I believe that understanding the technical side of an ingredient or a process makes it possible to push boundaries and create something truly unique,” she says. So, let’s dive into a little fermentation history and science. 

Humans have been using fermentation for thousands of years. Through the process of trial and error, we have beer, wine, cheese, fish sauce, miso, you name it! But it wasn’t until recently—just a few hundred years ago—that we were able to understand the science behind it. 

Fermentation is a metabolic process where microorganisms, primarily yeast and bacteria, break down large molecules into smaller ones. This process doesn’t just preserve food and beverages; it also releases entirely new flavors that we wouldn’t be able to experience otherwise. And this can go a step further: Norïe uses ferments that undergo a slow fermentation process lasting several months, not only elevating the flavor of the flowers but also unlocking their natural health benefits.

We generally think about the historical importance of fermentation to preserve food and beverage. We must also remember it also became widely popular because it releases flavors that humans were not able to identify in the commonly consumed form of the original ingredient. 

 

Fermented Flowers and Norïe

When we set out to create Norïe, we knew we wanted to craft something truly unique—something refined and complex, not just to replicate existing flavors or mimic alcoholic beverages. We wanted a multi-layered experience, one that makes you pause and think, “I recognize this flavor… but what is it, exactly?”

Inspired by our deep appreciation for flowers, Norïe is crafted from fermented flowers and extracts, fruits, botanicals, and spices to create elegant and complex blends. Each of our offerings is designed to showcase the natural beauty of its ingredients while bringing something unexpected to the experience:
