A food scientist and chef, Ioakeim embodies the spirit of Denmark\u2019s culinary revolution. What drew him to this space? \u201cThere\u2019s no limitation on what we can do.\u201d Don\u2019t you love that?<\/span><\/p>\n<p><span style=\"font-weight: 400;\">At Muri, the team doesn\u2019t seek to create wine alternatives or even remotely familiar beverages. \u201cWe used to call ourselves wine alternatives, but the term just sounds so sad and didn\u2019t do justice to the amount of craft and innovation we were putting into each bottle,\u201d explained founder Murray Paterson in <\/span><span style=\"text-decoration: underline;\"><span style=\"color: #333399;\"><a style=\"color: #333399;\" href=\"https:\/\/dryatlas.com\/staging\/articles\/interview-with-murray-paterson-founder-of-muri-copenhagen\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">our interview<\/span><\/a><\/span><\/span><span style=\"font-weight: 400;\">. Instead, they craft complex blends typically inspired by an unusual ingredient (e.g., pickled pine cones). They\u2019ll sometimes spend weeks identifying one key ingredient (e.g., smoked rhubarb).<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: agrandir-gh-eb;\"><b>About Yamil\u00e9<\/b><\/span><\/p>\n<p><span style=\"font-weight: 400;\">That smoked rhubarb is what makes my favorite blend, <\/span><span style=\"text-decoration: underline;\"><span style=\"color: #333399;\"><a style=\"color: #333399;\" href=\"https:\/\/muri-drinks.com\/products\/yamile\/?ref=dryatlas.com\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Yamil\u00e9<\/span><\/a><\/span><\/span><span style=\"font-weight: 400;\">, so special. It\u2019s a central flavor that somehow doesn\u2019t overpower the crisper raspberry and gooseberry notes. Muri calls Yamil\u00e9 \u201caromatic, funky, and smoky.\u201d I\u2019d say that\u2019s spot-on, with an emphasis on funky. It\u2019s not for everyone, but that\u2019s precisely why I love it. It takes a stand.
